Dwell Time is the first restaurant customer that went live on Toast in July 2013 in Toast: Aman Narang. How a Long Wait for the Dinner Check Launched a $2 Billion Business.. The source says the Cambridgeport restaurant’s system went down within about 20 minutes of taking the first orders.

The failed install became a defining Mission-Critical Restaurant Software lesson. Aman Narang says the team manually wrote orders on paper, brought them to the kitchen, and wrote down credit-card numbers, making restaurant POS reliability a live-service problem rather than a normal software bug.
